What is Superedibles' Raw Organic Cacao Powder?

All cacao, cocoa and chocolate products have a common origin – the cacao pod. The ripe pods are removed from the trees. Each pod holds several dozen seeds or beans. The pods are cut open and white pulpy seeds are removed from the skins of the pod. The beans are collected for fermenting and drying.
These are the first two stages in the process (fermenting and drying). It is during these stages that excessive heat can first be introduced into the process. Our processors ensure, through carefully designed and monitored procedures and equipment, that the cacao never exceeds 110 degrees Fahrenheit during any stage of it's processing or handling. This is to safeguard the delicate phytochemicals making it such an amazing food.
When the beans have reached the proper level of readiness, they are winnowed, removing the outer skin of the bean.
The beans are then broken into nibs – pieces of whole bean. The nibs can be used as snacks or ingredients in foods. The nibs are ground into chocolate liquor or cacao paste. These mechanical stages of reducing the bean to nib and then paste can also generate much heat and damage to the final product. Superedibles' Raw Organic Cacao Powder is hand processed the old fashioned way, in small batches with large wooden pestles, to ensure there is no excessive heat generated. This is different than virtually all other cacao bean and nib grinding processes worldwide. The next process in creating Superedibles' Raw Organic Cacao Powder is the separation of the dry component of the paste from the cacao butter. The result of this is a hard "cake" and raw cacao butter. The cake is then simply pulverized into powder.
There are precious few sources on earth that execute the oil separation stage without generating excessive heat.
